You’ll need:

  • 110 g instant noodles

Seasoning:

  • 1/4 tsp salt
  • 1/2 tbsp light soy sauce
  • 1 tbsp sesame oil
  • Half green onion, finely chopped

Side dish:

  • a bunch of baby spinach
  • 1 egg
  • optional: spicy sauce (e.g. Lao Gan Ma)

Instructions:

Take a bowl, add salt, light soy sauce, sesame oil and finely chopped green onion to the bowl.

Bring a pot of water to a boil, cook noodles according to the package instructions. When the noodles are almost done, blanch the baby spinach in the boiling water for 1 minute. Remove from the heat.

 

Before transferring out the noodles, take ~3/4 cup – 1 cup of the cooking water to the sauce bowl prepared in step 1 to make a soup bowl. Transfer out the noodles to the soup bowl, keep the remaining cooking water. Optional: you can porch an egg in the remaining cooking water.

 

Mix well the noodles in the soup bowl & Enjoy! Add a bit chili sauce if you like.

Cooking Tips:

  • Add more cooking water to the sauce bowl if you like soup noodles;
  • Adjust the seasoning based on the water add in the sauce bowl to your taste
